Recent Hits...and What's Up This Week


I haven't been able to work myself up to posting our menu every week (it's working out to about every other week), but we have lots of yummy stuff in between, so I wanted to throw these pictures and links out there as well.

When Elisabeth went to the birthday party (as Josefina) last weekend, she took some of her own GAPS-friendly eats along with her, including these Pizza Bites (or Pizza Nuggets as we've been calling them)...



We warmed up tomato sauce with Italian Seasoning and Garlic Salt
to use as dipping sauce for these pizza nuggets...they were YUM!


...and she took these Salted Caramel Pecans...

These. are. addictive.

...and finally, she took Chocolate Ice Cream

We had Arica and her family over to eat with us on Tuesday, and for dessert we made (again!) this yummy apple tart:



We've made this tart about, oh...10 times now.  That might be a slight exaggeration...but only slight.We change the recipe slightly to make it GAPS-friendly...and we love it.  Love it!  Elisabeth makes it by herself now.  Bonus.

We had Dr. Kathy and her friend Dr. Matt over for supper on Saturday night.  (I'm supposed to call her just Kathy now - she did help me paint our new house, after all.  I'm working on it, but old habits die hard.)  We had Italian Chicken Zucchini Lasagna for our entree.  Dessert was another batch of Chocolate Ice Cream (Hit! Kathy asked for recipe!) and Chai Spiced Cupcakes with a 7-Minute Frosting.



So that is what we've eaten recently...and here is what we're planning to eat this week:

Sunday
Waffles (triple batch, so we’ll have leftovers), two scrambled eggs each

Leftover Chicken Zucchini Lasagna

Meatballs and Red Sauce


Monday
Leftover waffles (warmed and crisped up in oven), two scrambled eggs each

Leftover meatballs from last night

Roasted Chicken (2, actually), Steamed broccoli, carrots


Tuesday
Three scrambled eggs each with sautéed onions

Chicken salad and assorted veggies and fruit

Pizza Soup  (we have Smoked Sausage from the last deer we had processed...woohoo!)

Wednesday
Spiced Apple Muffins, two scrambled eggs each

Leftover Pizza Soup

Lentil Stew


Thursday
Three scrambled eggs each with sautéed onions

Roasted Chicken (2, actually)

Mayo and Parmesan-Crusted Salmon, Butternut Squash, Green Peas


Friday
Morning Glory Muffins (quadruple batch and freeze leftovers)

Chicken Salad (with homemade mayo), assorted veggies and fruit

Pizza Boats


Saturday
Pancakes (quadruple batch and freeze leftovers)

Tuna Salad (with homemade mayo), assorted veggies and fruit

Chicken and Lentil Soup  (Marissa and Steven are coming over to watch the children while Jas and I go to his company's Christmas party...but we'll leave them all with some good food to eat!)
