I mentioned that Elisabeth has been enjoying working by herself in the kitchen more lately. Mostly fixing treats.
Well, she's been at it again...this time with the ice cream maker:

We've been loving Cheeseslave's Chocolate Ice Cream ever since we began GAPS. Earlier this week, it occurred to us that with some tweaks (changing the flavor, eliminating the need to heat the ice cream mixture, increasing the recipe to make MORE ice cream, etc.), we could turn that into a Strawberry Ice Cream that we thought our family would love...
...and we were right. It was so good that Elisabeth couldn't wait for it to come out of the ice cream maker before she dove in.
Mr. G can't have this ice cream (it has eggs in it), but the other three monkeys all heartily gave it thumbs-up.
And after sitting down and eating the finished product out of a bowl properly...
...Elisabeth concurred with the thumbs-up.
I love that this is a dessert/treat that I can truly feel good about us eating. The coconut milk (coconut oil also) contains healthy medium chain fatty acids and lauric acid. So good for you. We are not afraid of eating lots of eggs here, because we know how *great* they are for us...and we're not afraid to eat them raw when they're from pastured hens (and they're even healthier for us raw). Cocoa powder actually does have nutritional value...and cacao powder has even more (read the difference between the two here). And don't even get me started talking about raw honey...it deserves its own post for how it has made my seasonal allergies skidaddle!
(Update - April 2014 - We have begun omitting the eggs in these ice cream recipes
more often than not, so that G can eat this with us. If you freeze this ice cream, this makes
it more "icy", but our ice cream never makes it long enough to get
frozen...we eat it straight out of the maker. Yummy soft serve deliciousness!)
Strawberry Ice Cream (Dairy Free, No Sugar Added)
3 cups full fat coconut milk
6 egg yolks (preferably from pastured hens, save the whites for another use)
6 tbsp raw honey
2 c. strawberries (fresh or frozen)
pinch sea salt
1 tbsp vanilla
.....or......try it Chocolate!
Chocolate Ice Cream (Dairy Free, No Sugar Added)
3 cups full fat coconut milk
6 egg yolks (preferably from pastured hens, save the whites for another use)
6 tbsp raw honey
1/4 c. cacao powder (or cocoa powder)
pinch sea salt
1 tbsp vanilla
Blend all ingredients together in the blender, then follow the instructions for your ice cream maker. Enjoy!
