A Tasty way to get our Omega-3s

We eat quite a bit of walnuts, and I freshly grind up flax (in a coffee grinder that has never seen a coffee bean) to add to our oatmeal, and granola, (and smoothies, shhh!)...but "they" recommend that we also eat fish twice a week to help ensure we get the Omega-3s we should.

Now I do not like seafood, but we've found a routine that works for us. We normally have tuna for lunch once a week, and our other fish for the week is salmon. And the way we've been eating it lately is cooked and served with Garlic Lemon Butter Sauce. And, yes, we've been having it prepared that exact same way, every week, for months. It. is. that. yummy.

But while it is yummy tasting, it does not take yummy-looking pictures. Didn't want to scare anyone off with the pictures, so I just deleted them.



Salmon with Garlic Lemon Butter Sauce

• 2 teaspoons minced garlic
• 1/2 cup butter, cubed
• 6 tablespoons lemon juice
• 2 teaspoons salt (I think this is way too much, I use closer to 1/2 tsp.)
• 1/2 teaspoon pepper
• 1/2 teaspoon hot pepper sauce  (we normally omit this)
• 16 oz salmon fillets (I buy the 16 oz. bright orange package of Wild Salmon Fillets at Walmart, and use all 4 fillets)


Directions:-Heat oven to 375 degrees.

-Place salmon fillets in a 9x13 glass dish.  Bake for 20-22 minutes, or until fish flakes easily with a fork. 

-While the salmon is baking, cut up butter into chunks in a skillet (so it will melt quicker).  Mince or press the garlic and saute it in the butter.  Stir in the lemon juice, salt, pepper and pepper sauce (if using).

- Keep the sauce over lowest heat while the salmon cooks. When the salmon is done, pour the reserved sauce into little bitty bowls for each person, to have right on their plate. We all love to dip each bite of salmon into our own sauce – YUMMY!

  2. I really is yummy!! We (Chris and I) love it, too! The kids eat a small amount with pouty faces.
