Healthy Popsicles (Dairy-Free, No Added Sugar)

Just WHAT was he so stinkin' happy about?





This is what....









....POPSICLES!


Or "pickles"...as Mr. G refers to them.

Ever since we figured out that G was having trouble with dairy, he hasn't been able to have our homemade kefir smoothies or popsicles.  And OH, he surely did love them.

Why did it take me so long to figure out a dairy-free alternative for him?

I could say it's because this was super-hard to figure out...but that would be a lie.

So the real answer:  I'm lame, that's why.  So lame.




So, here is the super-hard   not-so-hard  super-easy recipe:

Homemade Coconut milk (full fat)
Bananas
Other fruit


I used about 2 cups of coconut milk, 2 bananas, and 2 cups of frozen assorted fruit (the 4 lb bag we buy every week has strawberries, pineapples, mango and peaches).

Whiz it up in the blender, and pour into popsicle molds.  Let it freeze.


Later, hand it to your child...and then stand back and wait for their undying love and admiration.


Just don't try to get between the child and the popsicle...






...or you may lose a finger.
