Our Current Favorite

We are a saucy family.  And by that I mean...we love sauces.  Love. Them.

If we can drizzle or dip...we are happy campers.

Some of us like them spicy.  Some of us like milder.  Some of us like vinegary. Some of us like tomato-based.  Some of us like anything and everything.  (But only one of us - Noah - doesn't like sauces at all.)

We recently had Dr. Kathy and Dr. Matt over to eat supper with us.

On the menu that night...

An appetizer tray holding: summer sausage, cheese, kalamata olives

Salad  (the kids designed a "salad bar" so everyone could choose what they wanted: spring mix, carrots, apples, sunflower seeds, parmesan cheese, etc.)

Italian Chicken and Zucchini Lasagna

Chocolate Ice Cream

We were all ready and excited for them to be arriving...and then...

I realized I didn't have any salad dressing.  ACCCHHH!!!  It was way too late in the game to run to a store to get some...besides, I can't bring myself to buy salad dressing anymore, even if they were GAPS legal.  Check out the ingredient list:  soybean oil is assuredly the first or second ingredient...and soy is NOT a healthy food, despite what "they" say)

I quickly inventoried our kitchen.  We had lemons and olive oil and I thought for sure that would be a good start for a dressing.  So I googled something like "Lemon Olive Oil Dressing"...and what do you know?  We found a dressing that we LOVE!

We've tweaked the original recipe a little, and here is how we've been making it:

Lemon Garlic Dressing

3 cloves garlic, pressed or minced
2 tsp. sea salt
1/2 c. extra virgin olive oil
1/2 c. fresh lemon juice

Combine all ingredients in a lidded jar and shake to comine.  That's it!  Now it's time to enjoy!

We love this on salads....of course.  But my girls also love this on their eggs in the morning (These girls love any sauce...on any thing.).  And they also like it on....well, basically anything else we have to eat when we have some of this dressing made.

But we don't always have it on hand...it gets used up quick whenever we make a batch!
